Abstract
The Taste, Flavor and Culture of Indian culinary heritage is found within Gujarati food. The nature of Gujarati Cuisine provides a unique selection of salty, sweet, tangy and spicy tastes, in addition to also a variety of traditional cooking techniques and the show there in depth cultural traditions with the demand for varieties regional foods increasing in today’s hospitality and food and beverages service sector, it is very important for us to identifying and understand what is influencing consumers’ purchase decisions. Therefore, this study is detailed examinee to investigate how cultural, taste, and price variables affect the consume purchase decisions regarding Gujarati cuisine. The research design was used for this study is descriptive and the primary data were collected from a structured questionnaire distributed to consumers who dine at different restaurants or food outlets serving Gujarati traditional food. Secondary data were obtained from article, books, research publications, and internet-based materials related to consumer behavior and Gujarat regional cuisine. The data obtained from consumers was analyzed using simple statistical methods like percentage analysis and graphical representation to interpret consumer behavior and preferences. The study finding indicate that consumer’s preferences for Gujarati cuisine are significantly influenced by culture attachment and traditional values. This is especially true for individuals who have strong regional and family ties to this style of cooking. The likelihood of consumers returning to buy Gujarati food is greatly influenced by the taste, which has been shown to be a significant factor. The importance of taste balancing taste, food quality, and authenticity in providing consumers with satisfaction is stressed. Price also play an important role on purchasing decisions when considering purchasing items from Gujarati food or regional food.
